Lime-sage veal chop over green tea buttermilk Yukon gold mashed

The quality of the veal will have a huge impact on the success of this dish.
Buy from a reputable butcher and the lime marinade adds a nice edge to this hardy dish.

Serves 4

Green tea buttermilk mashed
8 medium Yukon gold potatoes, peeled and quartered
400 ml. buttermilk
125 gr. Butter
2 cloves of garlic minced finely
Pinch of nutmeg
1 teaspoon of salt
½ teaspoon white pepper
1 tbs. Sugar
1 tsp. Matcha

Boil the potatoes in saltwater until soft. Strain and let them dry off.
Place potatoes back in the pot and mash them. Add buttermilk and all other ingredients, bring back to a boil, stir in the butter bit by bit. and serve.
